CUISINE, CALENTITA & RESTAURANT GUIDE

Gibraltarian cuisine is the result of a long relationship between Andalucía, the British as well as the many foreigners who made the Rock their home over the past three centuries. The culinary influences also include those from Malta, Genoa and Portugal. This marriage of tastes has given Gibraltar an eclectic mix of Mediterranean and British cuisine.

Cadiz news and informationSome typical Gibraltarian dishes in addition to the famous Calentita (Paloma - the last known street seller is shown here) are: Rosto – a local pasta dish of Italian origin; Fideos al Horno – similar to the Maltese mqarrun il-forn; Panissa – a bread like dish akin to Calentita; Bollo de Hornasso – a sweet and dry bread like the Spanish hornazo; Pan Dulce – a sweet fruit and nut bread specially popular at Christmas; Rolitos – a beef dish of Maltese origin similar to bragjoli and Japonesa – a sweet fried doughnut filled with custard and cream.

CALENTITA – THE NATIONAL DISH

Calentita has become the celebrated national dish of Gibraltar. The ingredients are simple –perhaps a throwback to the days of siege.
  • 250g chick pea flour
  • 1 litre water
  • olive oil
  • salt & pepper
(An egg and a pinch of cumin can also be added)
Mix chickpea flour, water and salt/pepper in a bowl. Leave to stand. Preheat oven to 175C. Take a tin 15x23cms or oven dish. Put enough oil to cover the bottom. Heat in oven. When hot, spread oil over the sides of tin with a pastry brush or by tilting. Stir mixture, pour immediately into tin then put back in the oven for about an one hour (until it is set in the middle). Will serve two or three people.

RIB ROOM RESTAURANT
Rock Hotel, 3 Europa Road.
Tel: 00 350 2007300
A room with a view.....and a fine menu too!

With stunning views over the bay, the restaurant at the Rock Hotel is now pleased to report that it has gained two coveted AA Rosettes for its food. You will find high standards of service and cuisine at the Rock as well as probably the finest views encompassing the Bay of Gibraltar, the Spanish hinterland and the Rif Mountains of Morocco.

A chilled glass of Manzanilla and an appetiser still welcomes diners and the ‘house’ and à la carte menus offer a range of dishes that reflect Gibraltar’s British heritage, as well as her geographical location betwixt Spain and north Africa.

Current à la carte temptations include a starter of Hand Dived Scallops with Iberian Ham or Quail Breasts flamed with Chartreuse with a Confit of Red Onion and Globe Artichoke. Main courses to tempt include Cannon of Lamb crusted with Provencal Herbs with a Peppered Swede Bavarois and Rosemary Jus or whynot Poached Fillet of Turbot with Braised Fennel and Avruga Caviar Velouté. Vegetarians will enjoy Thyme Baked Goats’ Cheese in Filo Pastry with Lentil Salsa or for pudding why not consider Hot Raspberry and White Chocolate Soufflé or Lime Leaf Crème Brûlée with a Salad of Blackberry and Moroccan Orange.

The ‘house menu’ is a three-course affair which changes daily, taking full advantage of what the markets have to offer and during the cooler months traditional Sunday lunch is still one of the best experiences on the Rock and is enjoyed by both locals and visitors alike.

The wine list, which is unpretentious and accessibly written, makes no excuses for majoring on some of the excellent wines that are coming from Spain at the moment. Likewise, the house wines are excellent and keenly priced.

The room is fully air-conditioned and there is a total non-smoking policy. Children are, of course, welcome and high-chairs are available. Restaurant Manager, Mohamed Youznassi and Head Chef, Alfred Rodriguez have worked hard to gain at first one and now two AA Rosettes and they are ready to welcome you to one of Gibraltar’s finest dining experiences.

For those of you who prefer a less formal environment there is the Barbary Bar and Wisteria Terrace menu which offers a choice of simpler ‘bistro’ style food as well as tapas, sandwiches and baguettes. A speciality of the Barbary Bar is its fondue menu. This is a stylish and sociable way of eating informally with family and friends and is proving to be very popular. There are cheese, meat and vegetable tempura fondues to be had to be followed (or enjoyed singularly) by a wicked chocolate fondue with marshmallow, baby doughnuts and banana slices!!

Why not try it? It’s a tough job but somebody has to!
